This carbon core, stainless clad knife from Hitohira knife certainly performs above it's pay-grade. An understated, traditional aesthetic we're loving in store. These are hand sharpened in Japan, the aesthetic / finish is a little rougher than others but performance is higher. Some care will be required to prevent chipping.
