A must have accessory. This entry level flattening stone is a great starting point for your whetstone maintenance. Whilst diamond plates are flatter and last longer, the initial expense is pretty high. This will do a decent job flattening your stones, making sharpening much easier and faster.

Japanese Sharpening Stones (Whetstones)
The consensus for sharpening Japanese kitchen knives, as well as Japanese woodworking tools, is the use of a whetstone. Dry grinding can affect temper (effectively ruining your knife or tool) and diamond plates are often too aggressive (removing too much material).
