We've had a few staff members become tweezer converts after purchasing some, not just for professional chefs they are a great tool to use in place of tongs. For deep and shallow frying the long straight versions give you easy maneuverability, even for bacon cooking or arranging ingredients around your pan to the right heat zones. We really enjoy using them.
