Suehiro whetstones are the most widely used whetstone in Japan, with a reputation for consistency and quality. Slightly softer than the other stones we stock, they are a high value option that performs very well. Most come with a convenient whetstone base (able to hold water for soaking), and small nagura (dressing) stone. 

 

This model is one of our favourites, being 2 stones for various use with both Japanese kitchen knives and woodworking hand tools such as chisels and Japanese planes. A combination of grit 1000 and 3000 enables you to deal with a variety of materials, from stainless steel to steel for medium and final sharpening.

Japanese Sharpening Stones (Whetstones)

The consensus for sharpening Japanese kitchen knives, as well as Japanese woodworking tools, is the use of a whetstone. Dry grinding can affect temper (effectively ruining your knife or tool) and diamond plates are often too aggressive (removing too much material). 
All Japanese whetstones will require flattening after use, no matter what type of stone, or the style of your sharpening, all whetstones will begin to dish over time. We recommend a ceramic flattening stone, or diamond plate for this task. For more info, check out Selecting a Japanese Whetstone
