Japanese Kitchen Knife | Kiritsuke (Slicing & Vegetable Knife)
The Kiritsuke is the head chef knife, used to multi-task around a Japanese kitchen. Like their Yanagiba cousin, (most) kiritsuke knives are a single bevel, traditional style of Japanese chef knife. Unlike yanagiba however, kiritsuke can be used for slicing and sashimi tasks, as well as a usuba style of knife for the preparation of vegetables.
