Suehiro whetstones are the most widely used whetstone in Japan, with a reputation for consistency and quality. Slightly softer than the other stones we stock, they are a high value option that performs very well. Most come with a convenient whetstone base (able to hold water for soaking), and small nagura (dressing) stone. 

This model is the larger New Cerax model in higher grit for fine finishing. Suitable for final sharpening of Japanese kitchen knives and woodworking tools.

The consensus for sharpening Japanese kitchen knives, as well as Japanese woodworking tools, is the use of a whetstone. Dry grinding can affect temper (effectively ruining your knife or tool) and diamond plates are often too aggressive (removing too much material).
